The Oatmeal Challenge: Day Six {Peanut Butter & Chocolate Cheesecake Oatmeal}

Who doesn’t like Peanut Butter and Chocolate? And if you put them together in a cheesecake? And turn that into oatmeal! Drool-icious right? I had to add more honey in this than I normally do because the peanut butter and cheese added a salty touch and the cocoa powder added some bitterness. The cookies, instead of making a crust, were crumbled on the top to add texture. This is more of rich dessert oatmeal than breakfast, and I loved it! I’m sure you will too. I tried this both warm and cold, I like it both ways.

P.S. I got a little bored with my favorite serving bowl and decided for a change today!

Chocolate_Peanut_Butter_Cheesecake_Oatmeal

Ingredients:
Milk 1 cup
Instant oats 3 tbsp
Cocoa powder 1 tbsp
Honey 3 tbsp
Peanut butter ½ tbsp
Happy cow cheese 1 triangle
Cookie 1 (crumbled)

Method:
Heat milk and let boil. Add cocoa powder, peanut butter and oats when milk starts boiling and whisk well. Cook until thickened. Add the cheese triangle and cook while stirring until cheese melts. Add in the honey and stir. Transfer to a serving bowl and sprinkle cookie crumbs, drizzle some peanut butter.

I used a chocolate chip cookie because that’s all I had on hand. Any cookie would work.
Any cheese similar to the Happy Cow Cheese (triangle cheese) can be used. I haven’t tried but I think cream cheese would work too.

  1. Loving all these oatmeal recipes!! Have you tried baked oatmeal? One of my favorites cause you can make a large batch and just reheat a portion in the morning for a quick breakfast. I have two recipes on my blog if you would like to give them a go! (apple pie and banana bread)
