Banana Chocolate Pudding

What started as the banana soft serve ice-cream, ended up being a pudding! After making the superb-ly delicious Mango Ice cream, I decided to try the banana soft serve which seemed very popular with health blog writers on the internet. So I froze some bananas, blended them up, added some peanut butter and cocoa powder; but I didn’t like the end result so much. It was too rich tasting and more like a pudding than ice cream, good for a quick sugar-free chocolate fix. And well, it doesn’t look so good in the picture either!

Fruit Salad

I wanted to have something different for breakfast today. Just didn’t feel like an oatmeal day today. So I made fruit salad with the fruits I had on hand. It was SO refreshing and filling, and deliciously healthy of course! I used what fruits I had so there’s no recipe strictly speaking. You can just try out your own variations and throw in whatever fruits you have available. I did two bananas, quarter of a melon, an orange, and three dates, sprinkled about half a teaspoon of cinnamon powder and it was good to go!

I think a few strawberries and some spinach would add all the yummy colors and flavors that it’s currently lacking!

The Oatmeal Challenge: Day Five {Banana Chocolate Chip Oatmeal}

This is my most favorite oatmeal recipe until now! The creamy oatmeal, the sweet bananas, bursts of chocolate, the crunch of walnuts…who wouldn’t want to start a day with a breakfast as awesome as this? Although I’m a chocoholic, yet I preferred this over the Chocolate oatmeal. I shall say no more as a picture is worth a thousand words:

Ingredients:
Milk – 1 cup
Instant oats – 3 tbsp
Cinnamon powder – ½ tsp
Walnuts (chopped) – 2 tbsp + 1 tbsp
Ripe bananas (medium) – 2
Chocolate (grated) – 2 tbsp (I used milk chocolate)

Method:
Heat milk with cinnamon powder, add the oats when milk is boiling and let simmer. Meanwhile, cut half a banana into round slices and reserve for garnish. Mash rest of the one and half banana. When the oatmeal is thickened to your liking, remove from heat. Add the mashed bananas and 2 tbsp chopped walnuts and whisk well. Let it cool slightly before topping with grated chocolate, or the chocolate will melt. Garnish with 1 tbsp walnuts and the reserved banana slices. Serve immediately.

Makes one serving

P. S.  I felt the milk chocolate was too sweet and would like to try dark/bittersweet chocolate next time. You may wish to reduce the amount of chocolate if you don’t like your oatmeal too sweet. Chocolate chips can be used instead of grated chocolate.
